  • 4 cloves garlic
  • kosher salt and black pepper to taste
  • 2 tbsp all purpose unbleached flour
  • 8 oz yukon gold potato
  • 1 red bell pepper
  • 1 8 oz can tomato sauce
  • 1/4 cup alcapparado
  • 1/4 cup plus 1 tbsp fresh chopped cilantro
  • 2 dried bay leaves
  • 1 1/2 tsp sazon
  • 1 tsp ground cumin
  • 4 center cut bone-in pork chops

Instructions

    Massage the pork chops with minced garlic, then incorporate sazon seasoning, cumin, 1/4 teaspoon of kosher salt, and black pepper.

    Dust the pork chops with flour before placing them into the slow cooker.

    Layer the potatoes and peppers on top of the chops.

    Drizzle the tomato sauce and add 1/4 cup of water over the meat.

    Mix in the minced garlic, alcaparrado (or olives), 1/4 cup of chopped cilantro, and bay leaves.

    Cook on LOW for approximately 8 hours, or until the potatoes are soft and tender.
