Ingredients

  • 1 teaspoon olive oil
  • 1 cup onions
  • ½ teaspoon kosher salt
  • ¼ cup gin
  • 2 cups plain whole milk Greek yogurt
  • 2 tablespoons light mayonnaise
  • ½ cup chopped martini olives
  • 2 teaspoons martini olive brine
  • ½ tsp fresh cracked black pepper
  • 1 teaspoon lemon zest
  • ¼ cup Gorgonzola cheese

Instructions

    In a small skillet, pour in olive oil and heat it over medium flame. Incorporate the onions and a pinch of salt. Sauté until they achieve a golden hue but retain some crunch. Introduce your choice of alcohol and allow it to cook down until nearly evaporated. Remove from heat and let it cool.

    In a medium-sized mixing bowl, blend together Greek yogurt, mayonnaise, chopped olives, olive brine, freshly ground black pepper, and the sautéed onion mixture. Gently fold in the gorgonzola cheese.
