
These luscious Dominican beans, infused with the delightful tastes of garlic, onion, cubanelle pepper, and a dash of adobo seasoning, are easily prepared in an Instant Pot or pressure cooker. They serve as an ideal vegetarian side or a hearty meatless main course.

Place the beans in a pressure cooker or Instant Pot, ensuring they are submerged in water with approximately 2 inches above them (about 10 cups).
Allow the beans to soak overnight, but do not drain them afterward.
The following day, secure the lid on the pressure cooker (or Instant Pot) and set the heat to medium. Once the pot reaches pressure, cook on high for 20 minutes. Allow for a natural release of the pressure.
While the pressure is releasing, heat oil in a large skillet over medium-low flame, then incorporate garlic, tomato paste, cilantro, diced red onion, pepper, and a bouillon cube. Sauté this mixture for about 10 minutes, stirring occasionally.
Once the pressure cooker is safe to open, release the steam and take out 25% of the beans along with some liquid. Transfer this to a blender and blend until smooth, then return the purée back to the pot.
Stir in adobo seasoning and salt (approximately 1 teaspoon), adjusting to your taste preference.
Add the sautéed vegetable mixture to the beans and bring to a gentle boil over medium heat. (If using the Instant Pot, utilize the sauté function.)
Let the mixture simmer uncovered over medium-low heat, stirring frequently, until the consistency becomes creamy and the liquid has reduced, which should take around 30 minutes.
Remove the cilantro, pepper, and onion from the pot before serving over rice. This recipe yields about 9 cups.
