Ingredients

  • 1 1/4 tablespoon cumin
  • 1 1/4 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 3/4 cup Stonyfield Organic whole milk plain yogurt
  • 2 15 oz cans black beans
  • 1 tablespoon olive oil
  • 1 medium onion
  • 1 red bell pepper
  • 1 diced jalapeno
  • 10 oz can rotel tomatoes with green chilies
  • 8 ounces frozen corn
  • 8 ounce can tomato sauce
  • 3/4 cup less-sodium vegetable broth
  • Optional Toppings: shredded cheddar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

    In a small bowl, combine the spices. Reserve 1 1/2 teaspoons of this mixture to stir into the yogurt later. Set the yogurt aside for now.

    In a blender, combine one can of beans (without draining) with 1/2 cup of water and blend until smooth. Drain the second can of beans and set it aside.

    Heat oil in a large pot over medium heat. Once hot, add the chopped onions, diced bell pepper, and jalapeño. Sauté for about 3 to 4 minutes until the vegetables begin to soften.

    Incorporate the tomatoes, corn, both types of beans (the drained ones and the pureed mixture), tomato sauce, vegetable broth, and the remaining spice blend into the pot.

    Increase the heat to bring the mixture to a boil. After boiling, reduce the heat, cover the pot, and let it simmer for approximately 15 minutes, stirring occasionally until the chili thickens.

    Serve your chili hot, garnished with the seasoned yogurt and any additional toppings you prefer.
