Rub the chicken with vinegar, salt, pepper, and oregano. If possible, let it marinate for a few hours to enhance the flavor.
Turn the Instant Pot to the sauté function. Once it’s heated, pour in the oil and add the chicken, allowing it to sear for approximately 4 minutes on each side until browned.
Stir in the tomatillo salsa, along with 2 tablespoons of cilantro and the jalapeño. Secure the lid and cook under high pressure for 20 minutes, or until the chicken is nice and tender. After the pressure has released, sprinkle with cilantro and serve over rice if you like.
For the slow cooker method, combine all ingredients in the pot and set it to low for 6 hours or high for 3 hours.
Alternatively, follow the same procedure for stovetop cooking, adding a splash of water and cooking covered on low heat until the chicken is extremely tender, which should take about 30 to 40 minutes.
