In a food processor, combine the soybeans, tahini, water, lemon juice, lemon zest, garlic, salt, pepper, and 1 teaspoon of olive oil. Process the mixture until it reaches a creamy and smooth texture.
If the mixture is too thick, incorporate additional water gradually until you achieve the desired smoothness.
Transfer the hummus to a serving bowl and drizzle the remaining olive oil on top. Sprinkle with sesame seeds for garnish.
Pair with an assortment of your preferred vegetables for dipping.
