  • 1 1/2 pounds 93% ground turkey
  • 1/2 cup quick oats
  • 1/4 cup canned reduced-sodium black beans
  • 1/4 cup chopped cilantro
  • 4 ounce can mild chopped green chili
  • 1 clove crushed garlic
  • 1 large egg
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon onion powder
  • 2/3 cup mild enchilada sauce
  • 1/3 cup Mexican cheese blend
  • 1 jalapeño sliced thin
  • 1/2 cup chopped scallions
  • 2 tablespoons mild enchilada sauce
  • 1/3 cup corn kernels

Instructions

    Begin by preheating your oven to 350°F. Prepare a sheet pan by lining it with parchment paper.

    In a spacious mixing bowl, combine the ground turkey, oats, 2 tablespoons of enchilada sauce, chopped scallions, corn, beans, diced green chiles, minced garlic, egg, salt, cumin, and onion powder.

    Using your clean hands, mix all the ingredients thoroughly until well combined. Then, form the mixture into an oval loaf shape on the prepared sheet pan, flattening the top to accommodate the sauce and cheese later.

    Place the loaf in the oven and bake for 55 to 60 minutes, or until it is fully cooked.

    Once baked, take it out of the oven and spread the remaining enchilada sauce on top, followed by the cheese and sliced jalapeños.
