Begin by preheating your oven to 350°F. Prepare a sheet pan by lining it with parchment paper.
In a spacious mixing bowl, combine the ground turkey, oats, 2 tablespoons of enchilada sauce, chopped scallions, corn, beans, diced green chiles, minced garlic, egg, salt, cumin, and onion powder.
Using your clean hands, mix all the ingredients thoroughly until well combined. Then, form the mixture into an oval loaf shape on the prepared sheet pan, flattening the top to accommodate the sauce and cheese later.
Place the loaf in the oven and bake for 55 to 60 minutes, or until it is fully cooked.
Once baked, take it out of the oven and spread the remaining enchilada sauce on top, followed by the cheese and sliced jalapeños.
Return the meatloaf to the oven and bake for an additional 5 to 10 minutes, or until the sauce is warmed and the cheese has melted. If you like, sprinkle some cilantro on top for garnish. To serve, move the meatloaf to a cutting board and cut it into 12 slices.
Optionally, serve with extra enchilada sauce on the side.
