In a spacious skillet set over medium heat, combine 1/2 tablespoon of olive oil with 1/2 tablespoon of butter. Toss in diced red bell pepper and minced garlic, sautéing for approximately 4 minutes.
Introduce the spinach to the skillet, seasoning it lightly with a pinch of salt and pepper. Stir continuously until the spinach has wilted down.
Incorporate cream cheese, half & half, and Parmesan cheese, stirring until the cream cheese has melted and the mixture takes on a creamy spinach consistency.
In a different skillet, heat the remaining oil and butter over medium-high heat.
Season the fish fillets on both sides with salt and pepper, then place them in the preheated skillet.
