Ingredients

  • 2 1/2 cups mixed fresh berries
  • 1/8 tsp salt
  • 1 cup 1% milk
  • 2 tsp vanilla extract
  • powdered sugar for dusting
  • baking spray
  • 10 tbsp light agave nectar
  • 1/2 cup unbleached all-purpose flour
  • 3 large eggs

    Begin by setting your oven temperature to 350°F (175°C).

    Prepare a baking dish by giving it a light coating of cooking spray and a sprinkle of flour. Add the mixed berries into the dish.

    In a large mixing bowl, combine the eggs, agave syrup, salt, and flour, whisking until the mixture is free of lumps. Incorporate the milk and vanilla extract, whisking again until completely smooth. Pour this mixture over the berries in the baking dish.

    Place the dish in the preheated oven and bake for 45 to 50 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

    Once removed from the oven, the flaugnarde will have a slight jiggle, which is perfectly normal. Allow it to cool on a wire rack; note that it will puff up during baking and then settle as it cools.
