In a small bowl, combine the pancake mix, vanilla extract, and water, stirring until the mixture is smooth and uniform.
Place a large nonstick skillet on the stove over medium-low heat and lightly coat it with cooking spray.
Using a fork, immerse each Oreo cookie in the pancake batter, then transfer it to the skillet in a single layer, ensuring the cookies do not touch each other (work in batches).
Allow the cookies to cook until the bottoms are set, then carefully flip them and continue cooking until they achieve a golden brown color, approximately 2 to 3 minutes longer.
