Begin by setting your oven to 350°F. Gently coat a 9 x 13 x 1.375 inch non-stick baking pan (also known as a quarter sheet pan) with cooking spray.
In a spacious mixing bowl, mix together the flour, baking soda, salt, and cinnamon, stirring until all ingredients are well combined.
In a separate bowl, use a whisk to blend the sugars with the butter, egg whites, applesauce, and vanilla until the mixture is light and airy.
Gradually incorporate the dry mixture into the wet ingredients using a spatula, adding in two stages until the batter is thoroughly combined. If the mixture appears more crumbly than smooth, you may add a tiny splash of water, one drop at a time, only if necessary, until it reaches a smoother consistency.
Gently fold in the white chocolate chips until evenly distributed.
Pour the batter into the prepared baking pan, using the back of a measuring cup to spread it out evenly.
Bake for 14 to 16 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean. Be careful not to over-bake, as this can lead to dry bars. Allow it to cool completely in the pan before transferring it to a cutting board.
While the bars are cooling, prepare the frosting by beating together the cream cheese, powdered sugar, and vanilla in a large bowl with an electric mixer until smooth and well combined.
Cut the cooled bars into 15 large squares (making 5 cuts in one direction and 3 cuts in the other). Then, slice each square diagonally to create triangles. Spread a thin, even layer of frosting over each cookie, taking care to leave a small border around the edges. Arrange fresh fruit on top of the frosting.
