Ingredients

  • cooking spray
  • 1/2 ounce crumbled goat cheese
  • 2 thin slices heirloom tomato
  • 1 ounce sliced Nova Lox
  • a few sliced sliced red onion
  • 1/2 tbsp capers
  • a few parsley leaves
  • 1/8 th tsp salt and pepper
  • 2 large eggs
  • 1 tablespoon chopped chives

Instructions

    In a mixing bowl, whisk together the eggs and chives, then season with salt and pepper to taste.

    Place a medium nonstick skillet on the stove over medium-low heat. Lightly coat the surface with cooking spray and pour in the egg mixture. Allow it to cook undisturbed until it begins to firm up, approximately 2 to 3 minutes. Once set, sprinkle goat cheese on top, then carefully slide the omelet onto a plate. Garnish with sliced tomatoes, lox, red onion, capers, fresh parsley, and additional chives.
