Ingredients

  • 15 ounce can chickpeas
  • 20 kalamata or gaeta olives
  • 1/4 cup red onion
  • 4 ounces fresh feta
  • Dressing:
  • juice of 2 fresh lemons
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons fresh oregano leaves
  • 1/4 teaspoon kosher salt
  • freshly ground black pepper
  • 1 1/3 cups grape tomatoes
  • 1 green bell pepper
  • 2 cups diced Persian cucumber

Instructions

    For each of the 4 containers or bowls that hold 4 cups each, distribute 1/3 cup of chickpeas, followed by 1/2 cup of diced cucumber, 1/4 of a green pepper, 1/3 cup of chopped tomato, a handful of olives, and some red onion. Finish off with a sprinkle of Feta cheese on top.

    In a separate small bowl, combine the lemon juice, olive oil, oregano, salt, and pepper, and whisk them together until well blended.

    Drizzle approximately 1 1/2 tablespoons of the dressing over each salad before serving.
