Ingredients

  • 1.25 lbs 93% lean ground turkey
  • 1 large egg
  • 3 cloves garlic
  • 1/4 red onion
  • 2 tbsp fresh oregano
  • 1/4 cup fresh parsley
  • 2 tbsp chopped fresh spearmint
  • 1 tsp kosher salt and fresh black pepper
  • olive oil cooking spray
  • 1/4 cup seasoned whole wheat breadcrumbs
  • 1 cup grated zucchini
  • 2 slices whole wheat bread

Instructions

    Moisten the bread by soaking it in water, then squeeze out any excess moisture. Tear it into small fragments and transfer them to a spacious mixing bowl.

    Add the ground turkey, egg, grated zucchini, breadcrumbs, minced garlic, chopped onion, mint, parsley, oregano, salt, and pepper to the bowl. Mix thoroughly.

    Using a 1/4 cup measuring cup, shape the mixture into meatballs that are about 1/4 cup in size, gently pressing them into slightly flattened patties. For optimal results, place them in the refrigerator before cooking to help maintain their form.

    For stovetop cooking: Lightly coat a large nonstick skillet with olive oil spray and heat it on very low. Cook the meatballs until they are fully cooked, turning them halfway through, which should take approximately 5 to 6 minutes per side. Alternatively, you can bake them in an oven preheated to 350°F for 20 to 25 minutes.

    For grilling: Ensure the grill is thoroughly cleaned before use and spray the grate with oil. Grill the meatballs over low heat until they are completely cooked, around 5 minutes on each side.
