Add the ground turkey, egg, grated zucchini, breadcrumbs, minced garlic, chopped onion, mint, parsley, oregano, salt, and pepper to the bowl. Mix thoroughly.
Using a 1/4 cup measuring cup, shape the mixture into meatballs that are about 1/4 cup in size, gently pressing them into slightly flattened patties. For optimal results, place them in the refrigerator before cooking to help maintain their form.
For stovetop cooking: Lightly coat a large nonstick skillet with olive oil spray and heat it on very low.
