Ingredients

  • 2 pounds 4 boneless, skinless chicken breasts
  • 1/2 cup finely chopped yellow onion
  • 2 teaspoon grated ginger
  • 4 garlic cloves
  • 1 tablespoon canola oil
  • 1/4 cup bourbon
  • 1/4 cup BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • Pinch red pepper flakes
  • 1/2 cup low sodium chicken broth
  • sliced scallions
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup low sodium or gluten-free soy sauce

Instructions

    Take each chicken breast individually and place it inside a Ziploc bag. Gently pound the chicken to achieve a uniform thickness, ensuring that the bag remains intact. Afterward, set the flattened breasts aside in the bag.

    In a medium mixing bowl, whisk together the soy sauce, apple sauce, onion, ginger, garlic, oil, bourbon, BBQ sauce, vinegar, brown sugar, and red pepper flakes until well combined.

    Set aside 1/3 cup of the marinade and refrigerate it. Pour the remaining marinade into the Ziploc bag containing the chicken. Seal the bag and refrigerate for a minimum of 30 minutes, or ideally overnight (the longer, the better! I let mine sit for 12 hours).

    Preheat your outdoor grill to medium-high heat. Discard the marinade from the bag and place the chicken on the grill. Cook for approximately 4 minutes on each side, or until the chicken is fully cooked.

    Once cooked, move the chicken to a plate and cover it loosely with foil. Let it rest while you prepare the sauce.

    In a small saucepan, pour in the reserved 1/3 cup of marinade and add chicken broth. Heat over medium-high heat until it reaches a boil. Once boiling, reduce the heat to medium-low and simmer until the sauce thickens slightly, about 5 to 6 minutes.

    Slice the chicken breast, drizzle with the sauce, garnish with scallions, and serve.
