
Grilled Bruschetta Chicken is a must-have during the warm months at my home! It’s essentially a caprese-style dish featuring succulent tomatoes, creamy mozzarella, fresh basil, red onion, aromatic garlic, and a drizzle of balsamic vinegar—a perfect choice for a tasty weeknight dinner!

In a mixing bowl, blend together the chopped onion, olive oil, balsamic vinegar, 1/4 teaspoon of kosher salt, and freshly ground pepper. Allow this mixture to rest for a few minutes.
Dice the tomatoes and transfer them to a large mixing bowl. Add minced garlic, fresh basil, the onion-balsamic mixture, and an additional 1/8 teaspoon of salt and pepper to taste. Allow this to marinate for at least 10 minutes, or up to overnight for enhanced flavor.
Just before serving, fold in the cheese to the tomato mixture.
Season the chicken breasts generously with salt and freshly cracked pepper.
Heat the grill to a medium-high temperature, ensuring to clean and oil the grates to prevent the chicken from sticking.
Grill the chicken for 2 minutes on each side, then remove and place on a serving platter. Top with the bruschetta mixture and enjoy.
