Ingredients

  • 2 pounds chicken breast cutlets
  • 2 1/2 tablespoon red wine vinegar
  • 1 1/2 teaspoons kosher salt
  • black pepper
  • 2 tablespoon extra virgin olive oil
  • 4 cloves crushed garlic
  • 3/4 teaspoon dried Italian herbs

Instructions

  1. 1

Prepare the Chicken: Begin with your thin chicken cutlets. If you haven't done so already, refer to the previous instructions to pound the chicken to an even thickness of approximately 1/4 inch.

  2. 2

Marinate the Chicken: In a large, shallow dish, mix together olive oil, minced garlic, dried herbs, and vinegar. Season both sides of the chicken with salt and freshly ground black pepper, then add the chicken cutlets to the marinade.

  3. 3

Ensure they are well-coated, then cover the dish and let the chicken marinate for a minimum of 30 minutes, though allowing it to sit for up to 2 hours will enhance the flavor. Alternatively, you can marinate overnight for maximum taste.

  4. 4

Preheat Your Grill: Set your grill or grill pan to medium-high heat. If using a charcoal grill, allow the coals to become covered with a layer of white ash before proceeding.

  5. 5

Grill the Chicken: When your grill is adequately heated, apply some oil to the grates and place the chicken cutlets on the grill. Cook the chicken for approximately 2-3 minutes per side, or until they are nicely browned and the internal temperature reaches 165°F (74°C). Due to the thinness of the cutlets, they will cook quickly, so be cautious not to overcook them, as this can lead to dryness.

  6. 6

Rest and Serve: After cooking, allow the chicken to rest for a few minutes prior to serving. This resting period helps the juices redistribute within the meat, resulting in a more tender and flavorful dish.
