In a small food processor, or by utilizing a mortar and pestle, combine the garlic with the herbs, vinegar, oil, and Dijon mustard, mashing everything together until it forms a smooth paste. Set this mixture aside for later use.
Lightly season the salmon fillets with a sprinkle of salt and freshly cracked pepper. Preheat your grill or grill pan on high until it reaches a hot temperature. Once hot, lightly coat the pan with oil and lower the heat to medium-low. Carefully position the salmon on the heated grill pan and allow it to cook undisturbed for 5 minutes.
Flip the salmon to the other side and continue cooking for another 3-4 minutes, while drizzling half of the garlic herb mustard mixture over the top.
Flip the salmon again and cook for an additional minute, applying the remaining sauce to the other side of the fish. Turn it once more and let it cook for about another minute to finish.
**Important: The total cooking time for the fish should be around 9-10 minutes per inch of thickness. If your fillets are thinner, be sure to reduce the overall cooking time accordingly.
Carefully transfer the cooked salmon fillets to serving plates and accompany them with fresh lemon wedges.
