In a mixing bowl, gently incorporate the ground beef with shredded carrots, sliced scallions, minced ginger, soy sauce, and sriracha.
Shape the mixture into 8 evenly sized patties, being careful not to overwork the meat to keep it tender.
In a small bowl, mix cornstarch with cold water until fully dissolved. Set this mixture aside for later use.
In a small saucepan over medium-low heat, combine soy sauce, pineapple juice, brown sugar, grated ginger, and minced garlic. Heat until it reaches a boil, then allow it to simmer until the sauce thickens, approximately 15 to 18 minutes.
Stir in the cornstarch mixture and continue to simmer until the sauce reaches a thicker consistency, about 2 minutes. Remove from the heat and let it cool.
Preheat the grill. Once it's hot, clean the grates and lightly coat them with oil.
Place the burger patties on the grill and cook over high heat for about 5 to 7 minutes per side, or until they reach your preferred doneness.
While the burgers are grilling, add the pineapple slices to the grill and cook for approximately 2 to 3 minutes on each side.
To assemble the burgers, lay a piece of lettuce on the bottom half of each bun. Add the grilled patty, drizzle with 1 tablespoon of teriyaki sauce, and top with a slice of grilled pineapple.
