Heat a grill pan on medium-high or prepare your grill to reach a medium-high temperature.
Lightly coat the peaches with oil, then place them cut-side down on the grill, cooking just long enough to achieve grill marks, approximately 2 minutes per side.
For assembly, position a ball of burrata in the center of each of the 4 plates, then artfully arrange the grilled peaches, watermelon cubes, and watercress around the cheese.
