  • 3 tbsp olive oil
  • 1-1/4 lbs boneless skinless chicken breast
  • 24 cherry tomatoes
  • 16 wooden skewers
  • 1/4 cup grated Parmigiano Reggiano
  • kosher salt and fresh pepper to taste
  • 1 clove garlic

    In a food processor, blend together basil, garlic, parmesan cheese, salt, and pepper until the mixture is smooth. Gradually drizzle in the olive oil while continuing to pulse.

    In a bowl, combine the uncooked chicken pieces with the pesto, ensuring they are well-coated, and allow to marinate for a few hours.

    Immerse wooden skewers in water for a minimum of 30 minutes to prevent burning (if using metal skewers, you can skip this step).

    Starting and finishing with the chicken, alternate threading pieces of chicken and tomatoes onto 8 pairs of parallel skewers, resulting in a total of 8 kebabs.
