Ingredients

  • 8 lamb loin chops
  • 6 cloves garlic
  • 1 1/4 teaspoon kosher salt
  • fresh ground pepper
  • 1 tsp extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp fresh rosemary leaves

Instructions

    In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, and chopped rosemary. Generously season the lamb with salt and black pepper, then coat it with the marinade. Allow the lamb to marinate for a minimum of 1 hour, or preferably overnight for enhanced flavor. After marinating, remove the lamb from the marinade and discard the excess. Grill the chops over medium-high heat to your preferred doneness, approximately 5 minutes per side, or alternatively, broil them in the oven.
