Ingredients

  • 4 oz 1 small haas avocado
  • 2 teaspoons chopped cilantro
  • 1/2 teaspoon kosher salt
  • fresh black pepper
  • 1/2 cup diced tomato
  • 1/4 cup chopped onion
  • 1 tbsp minced jalapeno
  • 1 teaspoon lime juice
  • 1/4 tsp kosher salt
  • 1 lb thin sirloin steaks
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/8 teaspoon dried oregano
  • pinch fresh ground pepper
  • 8 lettuce shells from 1 head
  • 1/4 cup diced tomato
  • 2 tablespoons diced red onion
  • 2 teaspoons lime juice

Instructions

    In a bowl, mix together the salt, cumin, garlic powder, oregano, and black pepper. Generously massage this spice blend onto the steak.

    In a separate small bowl, thoroughly mash the avocado and then incorporate the diced tomato, chopped red onion, cilantro, lime juice, and season with salt and pepper according to your taste. Set this mixture aside.

    Prepare the pico de gallo by combining its ingredients and then set it aside as well.

    Preheat your grill to a high temperature. Ensure the grates are clean and lightly coat them with cooking spray. Grill the steaks for 2 to 3 minutes on each side, or until they reach your desired level of doneness. Once done, transfer the steaks to a cutting board and allow them to rest for 5 minutes before slicing them into thin strips.

    To assemble, take each lettuce leaf and fill it with approximately 1 ½ tablespoons of guacamole, then layer on the sliced steak and top it off with the pico de gallo.
