"During the summer months, there's nothing quite like enjoying a Grilled Steak adorned with vibrant chopped tomatoes, zesty red onion, a drizzle of balsamic vinegar, and a touch of olive oil. Ingredients

  • 2 lb flank or london broil steak
  • 1 1/2 teaspoons kosher salt and fresh black pepper
  • 1/3 cup red onion
  • 3 to 4 medium tomatoes
  • 1 tbsp fresh herbs such as oregano
  • garlic powder
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar

Instructions

  1. 1

Use a fork to poke holes all over the steak. Generously season it with 1 1/4 teaspoons of kosher salt, along with pepper and garlic powder. Allow the steak to rest at room temperature for approximately 10 minutes.

  2. 2

In a sizable mixing bowl, mix together the onions, olive oil, balsamic vinegar, 1/4 teaspoon of salt, and pepper. Allow the onions to marinate in this mixture for a few minutes to soften their flavor. Then, incorporate the tomatoes and fresh herbs, adjusting the salt to taste if necessary.

  3. 3

Preheat your grill or broiler to high heat. Grill the steak for around 7 minutes per side for a medium-rare result, or cook longer according to your preference. Once done, transfer the steak to a plate and let it rest for about 5 minutes before cutting.

  4. 4

Cut the steak into thin slices on a diagonal angle; top with the tomato mixture and serve.
