Ingredients

  • 14 ounces sweet potato
  • 3/4 cups canned black beans
  • 3/4 cups corn kernels
  • 1 large diced tomato
  • 1 jalapeño
  • 1 cloves garlic
  • 2 tablespoons chopped cilantro
  • 1 1/2 teaspoon cumin
  • 1 1/4 teaspoon kosher salt
  • 1/2 cup chicken broth
  • lime wedges
  • 4 ounces avocado
  • 1 pound 93% lean ground turkey
  • 1/4 cup chopped onion
  • 2 tablespoons tomato paste

Instructions

  1. 1

In a large skillet, heat oil over high heat and add the ground turkey. Season it with 1 teaspoon of salt and 1 teaspoon of cumin.

  2. 2

Cook the turkey, breaking it apart as it cooks, for approximately 5 minutes or until it is fully cooked.

  3. 3

Shift the meat to one side of the skillet, spray the empty side with oil, then add the onion and tomato paste. Sauté for 1 minute.

  4. 4

Incorporate the sweet potato, black beans, corn, diced tomato, jalapeño, garlic, and cilantro, stirring in the chicken broth.

  5. 5

Sprinkle in 1/4 teaspoon of salt, adjusting to your preference, along with the cumin.

  6. 6

Combine the mixture and cover the skillet. Reduce the heat and simmer for 12 to 14 minutes, or until the sweet potato is soft.

  7. 7

Serve the dish garnished with avocado, lime wedges, and additional cilantro.
