Heat a large skillet on high and lightly coat it with cooking spray. Add the ground turkey and season it with 1 teaspoon of salt and 1 teaspoon of cumin.
Cook the turkey, breaking it apart with a spatula, until it's fully cooked, which should take about 5 minutes.
Once the turkey is browned, shift it to one side of the skillet. Incorporate the chopped onion and tomato paste, cooking for 1 minute.
Stir in the black beans, corn, diced tomato, jalapeño, minced garlic, and cilantro, adding 1/4 cup of water to the mixture.
Introduce the zucchini along with the remaining 1/4 teaspoon of salt and cumin.
Combine all the ingredients, cover the skillet, and let it simmer on low heat for 4 to 5 minutes, or until the zucchini is tender yet still crisp.
Serve the dish with lime wedges and additional cilantro if you like.
