Ingredients

  • 14 ounces from 2 medium or 1 large zucchini, quartered and sliced 3/4 inch
  • 1 pound 93% lean ground turkey
  • 3/4 cups corn kernels
  • 1 large diced tomato
  • 1 jalapeño
  • 1 cloves garlic
  • 2 tbsp chopped cilantro
  • 1 1/4 teaspoon cumin
  • 1 1/4 teaspoon kosher salt
  • 1/4 cup water
  • lime wedges
  • 3/4 cups canned black beans
  • 1/4 cup chopped onion
  • 1 tablespoon tomato paste

    Heat a large skillet on high and lightly coat it with cooking spray. Add the ground turkey and season it with 1 teaspoon of salt and 1 teaspoon of cumin.

    Once the turkey is browned, shift it to one side of the skillet. Incorporate the chopped onion and tomato paste, cooking for 1 minute.

    Stir in the black beans, corn, diced tomato, jalapeño, minced garlic, and cilantro, adding 1/4 cup of water to the mixture.

    Introduce the zucchini along with the remaining 1/4 teaspoon of salt and cumin.
