Guacamole Deviled Eggs

My mom has a unique twist on guacamole by incorporating hard-boiled eggs, which inspired me to flip the idea around and mix guacamole into the eggs instead. The outcome was delightful, and as I was experimenting for the blog, I ended up savoring them for lunch.

Ingredients

  • 6 large eggs
  • 1 tbsp minced jalapeno
  • 1 tbsp fresh cilantro
  • kosher salt and fresh ground pepper
  • 1 tbsp diced tomato
  • pinch chile powder
  • 1 tsp red onion
  • 2-3 tsp fresh lime juice
  • 1 medium haas avocado

Instructions

    Carefully remove the shells from the chilled hard-boiled eggs.

    Slice the eggs in half lengthwise, setting the yolks aside for later use.

    In a mixing bowl, combine the avocado with the two reserved egg yolks and mash together until smooth; discard any remaining yolks.

    Stir in lime juice, diced red onion, chopped jalapeño, fresh cilantro, along with salt and pepper, adjusting the seasoning to your preference. Gently incorporate the diced tomato.

    Generously fill each of the 12 egg halves with the guacamole mixture using a spoon.

    Dust a pinch of chile powder over the top for a pop of color and arrange them beautifully on a serving platter.
