Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1 pound peeled and deveined jumbo shrimp
  • juice of 1/2 lemon
  • 4 tablespoons each of chopped mint and/or cilantro
  • crusty bread
  • 1 10 ounce jar mild harissa sauce
  • 2 15-ounce can chickpeas or white beans, rinsed and drained
  • 2 cloves garlic

    In a large skillet, warm the oil over medium heat. Once it reaches the desired temperature, incorporate the garlic and sauté until it’s just shy of golden brown, which should take around 1 minute.

    Lower the heat and stir in the harissa, 1/4 cup of water, and the chickpeas. Allow the mixture to come to a boil, then cover the skillet. Let it simmer on medium-low for 5 minutes to allow the flavors to combine.

    Introduce the shrimp to the skillet, cover, and cook until the shrimp are opaque and fully cooked, which will take approximately 2 to 3 minutes.
