Begin by preheating your oven to 450°F. Lightly mist a baking sheet with cooking spray.
In one bowl, pour in the whisked eggs, while in a separate bowl, combine the breadcrumbs, panko, and grated Parmesan cheese.
Season the shrimp with salt and pepper, then dip them a few at a time into the egg mixture to ensure they are fully coated.
Transfer the coated shrimp into the breadcrumb mix, rolling them to cover completely, and then place them on the prepared baking sheet.
If you have any leftover breadcrumb mixture, feel free to re-dip the shrimp into the egg and then back into the crumbs before placing them again on the baking sheet.
