Ingredients

  • 12 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 cups skim milk
  • 1 cup chicken or vegetable broth
  • 8 ounces reduced-fat cheddar
  • kosher salt
  • 4 cups baby spinach
  • 2 tablespoons grated Parmesan
  • 1/4 cup seasoned whole wheat bread crumbs
  • olive oil spray
  • 1/4 cup flour
  • 1/4 cup minced onion

Instructions

  1. 1

Boil pasta in a pot of salted water based on the instructions provided on the package. Lightly coat a baking dish with cooking spray.

  2. 2

Set the oven temperature to 375°F to preheat.

  3. 3

In a spacious, sturdy skillet, melt the butter over low heat. Gradually incorporate the flour, whisking continuously.

  4. 4

Introduce the chopped onion and sauté for an additional 2 minutes. Pour in the milk and chicken broth, whisking as you go. Increase the heat to medium-high, stirring until the mixture reaches a boil and thickens to a smooth consistency. Season with salt and pepper to taste.

  5. 5

Once the sauce has thickened, take it off the heat. Gradually stir in the cheese, adding it in 1/4 cup increments, mixing thoroughly until fully melted. Taste and adjust seasoning with salt and pepper if necessary, then fold in the cooked macaroni and baby spinach.

  6. 6

Transfer the mixture into the prepared baking dish. Sprinkle the top with grated cheese and breadcrumbs, then lightly spray with additional cooking oil.

  7. 7

Bake in the oven for 15 to 20 minutes, then switch to broil for a few minutes to achieve a golden-brown crust on the breadcrumbs.
