Begin by heating your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. If you opt for parchment paper, lightly mist it with cooking spray to prevent sticking.
In a medium-sized mixing bowl, combine the flour, baking powder, and salt, then whisk them together thoroughly.
Introduce the cottage cheese into the mixture, and use a fork or spatula to blend it in until the mixture resembles small crumbles.
Proceed to knead the mixture within the bowl, turning it until it achieves a smooth consistency akin to playdough, which should take around 20 turns.
Portion the dough into four equal pieces, shaping each into a ball.
Gently press each ball into a round shape and place them onto the prepared baking sheet.
Brush the tops with an egg wash and sprinkle your choice of seasoning. Bake on the upper rack of the oven for 22 to 25 minutes.
Allow the rolls to cool for a minimum of 15 minutes before slicing them open.
Preheat the air fryer to 280°F (138°C). Carefully transfer the rolls in batches, ensuring not to overcrowd the basket, and cook for 15 to 16 minutes, or until they achieve a golden color. There is no need to flip them during cooking. Afterward, let them cool for at least 15 minutes before cutting.
