Ingredients

  • 2/3 cup 4% milk fat small curd cottage cheese
  • 2 large eggs
  • 1 tablespoon sugar
  • 6 tablespoons water
  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract

Equipment Needed

  • mini waffle maker

Instructions

  1. 1

Preheat your waffle maker to a medium heat setting.

  2. 2

In a blender, combine cottage cheese, egg yolks, vanilla extract, and sugar if desired. Add 6 tablespoons of water, oat flour, baking powder, and salt, then blend the mixture until it reaches a smooth consistency. Use a spatula to transfer the batter into a medium-sized bowl, ensuring you scrape out all the contents.

  3. 3

Whisk the egg whites until they form soft peaks, then gently fold them into the batter until just combined.

  4. 4

Lightly coat the preheated waffle iron with cooking spray. Pour approximately 1/4 cup of the batter into the iron and cook until the waffles are golden brown and no steam is escaping.
