Combine all the ingredients in a slow cooker and add enough water to cover them.
Secure the lid and set the cooker to high for 4 hours or low for 8 hours to allow the flavors to meld.
Once the cooking time has elapsed, discard the vegetables, strain the broth, and set aside the chicken for later use in dishes such as chicken salad or any recipe requiring shredded chicken.
If you don’t plan to use the broth immediately, transfer it to containers for refrigeration, where it can last up to 2 days, or freeze it for several months.
After the broth has cooled, you’ll notice a layer of fat solidifying on the surface, which can be easily skimmed off.
Alternatively, you can place all the ingredients in a large saucepan, cover it, and let it simmer on low heat for several hours.
