Ingredients

  • 3 cups 1% milk
  • 1 vanilla bean
  • 1 tsp cornstarch
  • freshly grated nutmeg
  • spiced rum or bourbon
  • 2 large eggs
  • 1/3 cup sugar

Instructions

    In a medium saucepan, warm 2-1/2 cups of milk over medium heat.

    Carefully slice the vanilla bean down the middle and extract the seeds; place both the seeds and the pod into the saucepan, allowing it to simmer gently.

    In a large mixing bowl, vigorously whisk together the eggs, sugar, and cornstarch until the mixture achieves a pale yellow color.

    Gradually introduce the hot milk mixture to the egg mixture by pouring in approximately 1 cup at a time, whisking continuously to avoid curdling (this step is crucial to prevent scrambling the eggs).

    Transfer the combined mixture back into the saucepan.

    Return the saucepan to medium heat and stir constantly with a wooden spoon until the eggnog starts to thicken, which should take about 6-7 minutes.

    Once thickened, take the pan off the heat and immediately mix in the remaining 1/2 cup of milk to halt the cooking process.
