The secret to the best, irresistible manicotti is to make them from scratch with my easy homemade crespelles, which are basically Italian crepes. These spinach and cheese manicotti are filled with three cheeses – ricotta, mozzarella and parmesan, then topped with homemade sauce. So damn delicious!

Homemade Spinach Manicotti

The key to creating the most delectable and tempting manicotti lies in crafting them from the ground up using homemade crespelles, which are essentially Italian-style crepes. These delicate wraps are generously filled with a mixture of spinach, egg, and a trio of cheeses, then finished off with a layer of rich, homemade sauce. Satisfying and full of flavor!

Ingredients

  • 16 homemade crespelles
  • 1 large egg
  • 10 oz package frozen spinach
  • 1/4 cup grated Parmesan Regianno*
  • 1/2 teaspoon kosher salt
  • black pepper
  • 2 1/2 cups jarred marinara or homemade marinara sauce
  • 2 cups shredded part-skim mozzarella cheese
  • 15 oz part skim ricotta cheese

Instructions

  1. 1

Begin by preparing the crespelles (refer to the recipe link provided earlier).

  2. 2

Set your oven to preheat at 375°F.

  3. 3

In a spacious mixing bowl, blend together the ricotta, 1-1/2 cups of mozzarella, egg, spinach, parmesan cheese, along with 1/2 teaspoon of salt and pepper.

  4. 4

Take each crespelle and fill it with 1/4 cup of the spinach mixture, then carefully roll it up.

  5. 5

In a large baking dish (or divide it into two smaller ones), pour 1 cup of sauce to coat the bottom. Arrange the rolled manicotti seam-side down in the dish. Pour an additional 1-1/2 cups of sauce over the top and sprinkle with the remaining mozzarella.

  6. 6

Cover the dish with aluminum foil and bake for approximately 25 minutes, or until the dish is heated through, bubbling, and the cheese has melted.
