Ingredients

  • 8 oz fat-free Greek yogurt
  • 1 tbsp fresh dill
  • 1 tbsp fresh chives
  • kosher salt and fresh pepper
  • 1 small cucumber
  • 1 clove garlic
  • 1 tsp lemon juice

    Use a metal strainer or a coffee filter to drain the yogurt for several hours, allowing it to lose as much liquid as possible. Once drained, set it aside.

    With a small spoon, remove the seeds from the cucumber. Either chop the cucumber in a mini food processor or grate it using a box grater. Transfer the grated cucumber to a metal strainer and sprinkle a pinch of salt over it—this aids in drawing out the moisture. You might find it helpful to press down with the back of a spoon to extract any additional liquid.

    In a bowl, mix together the drained cucumber, minced garlic, yogurt, salt, pepper, lemon juice, dill, and chives. Cover and chill in the refrigerator for a minimum of 1 hour prior to serving.
