Ingredients

  • 13.75 oz artichoke hearts packed in water
  • 1/2 cup fat-free Greek yogurt
  • 1/2 cup light mayonnaise*
  • 2/3 cup good quality grated parmesan
  • 4 oz shredded part-skim mozzarella cheese
  • salt and fresh pepper to taste
  • olive oil spray
  • 1/4 cup chopped shallots
  • 10 oz frozen spinach
  • 1 clove garlic

Instructions

    Using a small food processor, pulse the artichoke hearts along with the garlic and shallots until they are roughly chopped.

    In a medium mixing bowl, blend all the ingredients together.

    Preheat your oven to 375°F.

    Transfer the mixture into an oven-safe dish and bake at 375°F for 20 to 25 minutes, or until the dip is bubbling and the cheese has melted. Serve immediately.

    Alternatively, place the dip in a microwave-safe container, cover it with a vented lid, and heat in the microwave for 3 to 5 minutes, or until it’s hot and the cheese is melted.
