Ingredients

  • 1 tbsp fresh lime juice
  • 1/2 cup brewed green tea
  • 4 baby arugula leaves
  • 2 tsp sugar
  • 1 oz white rum
  • 4 large spearmint leaves

Instructions

    In a tall Collins glass, combine the lime juice, mint leaves, arugula, and sugar. Use a muddler to gently press the mixture until the mint is lightly bruised and the aromatic flavors are released.

    Fill the glass with ice cubes until it reaches approximately three-quarters full, then pour in the rum followed by the green tea.

    Mix thoroughly and finish off with a garnish of fresh mint and a slice of lime.
