Ingredients

  • 1 teaspoon olive oil
  • 3 garlic cloves
  • 10 ounces Delallo whole wheat pasta such as ziti or cavatappi
  • 2 cups homemade or jarred marinara sauce
  • 1/2 cup part skim ricotta
  • 1/4 cup grated Pecorino Romano
  • 1 cup part-skim mozzarella cheese
  • 2 cups water
  • 3/4 teaspoon Kosher salt
  • 2 cups chopped baby spinach

Instructions

    Activate the sauté function on your Instant Pot. Once it’s hot, pour in the oil and add the garlic; sauté for about 1 minute, or until it turns a lovely golden color.

    Pour in the water along with the salt to deglaze the pot, ensuring that any garlic bits stuck to the bottom are loosened up.

    Incorporate the spinach and pasta into the pot, stirring to combine.

    Carefully pour the marinara sauce over the uncooked pasta, ensuring it’s evenly distributed and fully covering all the pasta. Avoid stirring at this stage.

    Secure the lid and set the pot to cook at high pressure for 7 minutes.

    Perform a quick release of the pressure, then lift the lid, stir the pasta, and add dollops of ricotta on top. Sprinkle with Pecorino and mozzarella cheese.

    Place the lid back on and let it sit for 3 to 4 minutes, or until the cheese is melted and bubbly.
