  • 2 slices center-cut bacon

  • ½ medium poblano pepper

  • 3 ½ cup low sodium chicken broth
  • 1 tablespoon green Tabasco
  • Kosher salt
  • 1 tablespoon chili powder
  • 1 ½ teaspoons cumin

    Prepare the beans: Start by rinsing the black beans thoroughly. Place them in the Instant Pot, then pour in 8 cups of water along with 2 teaspoons of Kosher salt. Secure the lid and set the appliance to manual mode, cooking for 4 minutes. Once the timer goes off, switch to “Keep Warm” mode for an additional 10 minutes. Afterward, drain and rinse the beans to remove excess salt and starch.

    In a separate small bowl, mix together the cumin, chili powder, coriander, smoked paprika, 1 tablespoon of kosher salt, and a pinch of pepper.

    Change the setting on the Instant Pot to “Sauté.” Once it reaches the right temperature, add the bacon and sauté for about 1 minute. Next, incorporate the onions and poblano pepper, sautéing for 3 minutes until softened. Stir in the spice mixture along with the minced garlic, and sauté for another 30 seconds to release the aromas. Then, pour in the broth and add the drained beans, stirring everything together thoroughly.

    Close the lid of the Instant Pot, ensuring that the steam release handle is positioned to “sealing.” Select the “Bean/Chili” mode and set the cooking time for 15 minutes.
