  • 2 teaspoons kosher salt
  • 1/2 teaspoon sazon
  • 1/4 teaspoon dry oregano
  • 1 cup reduced sodium chicken broth
  • 2-3 chipotle peppers in adobo sauce
  • 2 bay leaves
  • 1/4 teaspoon dry adobo seasoning
  • 1/2 teaspoon garlic powder
  • black pepper
  • 6 cloves garlic
  • 1 1/2 teaspoons cumin

    Generously season the pork with salt and freshly ground pepper.

    Activate the sauté function on the Instant Pot, apply a light coating of oil, and sear the pork on all sides for approximately 5 minutes. Once browned, take it off the heat and let it cool slightly.

    With a sharp knife, make incisions in the pork that are about an inch deep, and tuck in the slivers of garlic evenly throughout the meat.

    Sprinkle the pork with cumin, sazon, oregano, adobo seasoning, and garlic powder, ensuring it's evenly coated.

    Pour in the chicken broth, add the chipotle peppers, and give it a stir. Then, introduce the bay leaves and carefully place the pork into the Instant Pot. Secure the lid and set it to cook under high pressure for 80 minutes.

    Once the pressure has fully released, use two forks to shred the pork, mixing it thoroughly with the juices that have collected at the bottom of the pot.
