Ingredients

  • 1 cup long grain white rice or jasmine
  • 1 1/4 cups water
  • 1/4 cup fresh chopped cilantro
  • juice of 1/2 lime
  • 2 teaspoons olive oil
  • 1 teaspoon kosher salt

Instructions

    Place the rice, water, 1 teaspoon of oil, and salt into the pot of the pressure cooker and give it a good stir to combine.

    Secure the lid and set the cooker to high pressure for 3 minutes. Once the timer signals that cooking is complete, allow for a natural pressure release for 10 minutes.

    After the 10-minute period, perform a quick pressure release and use a fork to fluff the rice gently.
