Ingredients

  • 1-1/2 lb 93% lean ground beef
  • 1/2 large chopped onion
  • 1/2 red bell pepper
  • 2 tbsp cilantro
  • 4 oz 1/2 can tomato sauce (I like Goya)
  • 1 tsp ground cumin
  • 1-2 bay leaf
  • 2 tbsp alcaparrado
  • 1 teaspoon kosher salt
  • 2 cloves garlic
  • 1 to mato

    Activate the sauté function on your Instant Pot. Once it reaches a high temperature, add the ground meat and season it with salt and pepper. Utilize a wooden spoon to crumble the meat into smaller bits, cooking until it is fully browned and no longer shows any pink.

    Incorporate the chopped onion, minced garlic, diced tomato, salt, pepper, and cilantro into the pot, stirring for approximately one minute. Next, add the alcaparrado or olives along with about 2 tablespoons of their brine (the liquid from the olives enhances the flavor), along with cumin and a bay leaf. Pour in the tomato sauce and add 3 tablespoons of water, stirring everything together thoroughly. Secure the lid and cook under high pressure for 15 minutes. You can either allow for a natural release or perform a quick release, then savor your delicious creation!
