Ingredients

  • 4 cups chopped romaine
  • 1/2 cup peeled English cucumber
  • 1 tablespoon red wine vinegar
  • kosher salt and black pepper
  • 1/2 roasted red pepper
  • 1 ounce genoa salami
  • 6 tablespoons shredded part-skim mozzarella
  • sliced red onion
  • 2 tablespoons olive oil
  • 1/2 cup halved cherry tomato
