Ingredients

  • 2 tablespoon extra virgin olive oil
  • 1/4 tsp teaspoon kosher salt
  • 8 cups chopped iceberg or romaine lettuce
  • 6 ounces thin sliced turkey
  • 2 ounces thin slices genoa salami
  • 3 ounces turkey pepperoni
  • 2 ounces Capicola
  • 1/3 cup shredded part-skim mozzarella & provolone mix
  • 1/3 cup cherry tomato
  • 1/4 cup red onion
  • 1/4 cup pickled pepperoncini or banana peppers
  • 1/4 cup black olives
  • 3 tablespoons red wine vinegar
  • 1/2 tablespoon Italian seasoning
  • 1 clove minced garlic

Instructions

    In a petite mixing bowl, combine the olive oil, vinegar, half a tablespoon of Italian seasoning, minced garlic, salt, and a tablespoon of the brine from the pepperoncini. Whisk together until well blended.

    In a large mixing bowl, combine the chopped lettuce, turkey slices, salami, pepperoni, capicola, cheese, diced tomato, sliced red onion, pepperoncini, and black olives.
