  • 2 tbsp drained capers
  • 1/4 cup chopped red bell pepper
  • juice of 1/2 lemon
  • 1/2 tbsp olive oil
  • 8 oz frozen classic  mixed vegetables
  • 1/4 cup good quality sliced black olives
  • 1 cup cooked and cooled brown rice

Instructions

    Carefully drain the tuna, making sure to keep the oil separate, and set the oil aside for later use.

    In a spacious mixing bowl, combine the brown rice, the drained tuna, chopped vegetables, black olives, capers, and diced bell pepper.
