Begin by heating your oven to 400°F (204°C).
On a baking sheet, place the cauliflower, broccoli, and bell peppers. Drizzle with oil, then sprinkle with 1/4 teaspoon of salt and pepper. Toss everything together until well coated.
Arrange the vegetables in a single layer. Roast in the oven for 20 minutes.
While the veggies are roasting, in a large mixing bowl, combine the breadcrumbs, chicken broth, egg, spices, and the remaining 3/4 teaspoon of salt. Stir until everything is thoroughly mixed.
Incorporate the ground turkey into the mixture, using a fork to blend gently. Be careful not to overmix. Shape the mixture into 16 meatballs.
After the 20-minute mark, take the baking sheet out of the oven. Give the vegetables a stir, then shift them to one side of the pan. Place the meatballs on the opposite side, ensuring there is some space around each one.
Return the sheet to the oven and bake until the meatballs are fully cooked, which should take about 18 to 20 minutes. Serve while warm.
