Take each cheese slice and fold it into quarters, forming 4 compact stacks.
Portion the ground turkey into 8 equal pieces, then flatten each piece into patties that are approximately 1/4 inch thick.
Place a cheese stack in the middle of 4 of the patties, then cover them with the remaining 4 patties. Firmly pinch the edges to seal them, and gently push up the sides to ensure they're uniformly thick. Season both surfaces generously with salt and black pepper.
