  • 14 oz Italian chicken or turkey sausage*
  • 1 tsp olive oil
  • 1 onion
  • 1 medium carrot
  • 4 cloves garlic
  • 8 cups reduced-sodium chicken broth
  • 2 cups water
  • 3 medium red potatoes
  • 1 pinch dried red pepper flakes
  • 1/4 teaspoon fresh ground pepper
  • kosher salt
  • 8 cups 1/2 bunch kale, stems removed, leaves shredded

Instructions

    In a sizable Dutch oven or pot, sauté the turkey sausage over medium-low heat until it achieves a golden-brown hue, which should take roughly 10 minutes.

    Once browned, transfer the sausage to a plate, allow it to cool slightly, and then slice it into thin rounds.

    Pour in some oil, then add the chopped onions and carrots; sauté on medium heat until they soften, approximately 5 minutes. Stir in the minced garlic and continue cooking for an additional minute.

    Pour in the broth and water, then season with black pepper. Add the sliced sausage, diced potatoes, and red pepper flakes, and bring the mixture to a rolling boil.
