Ingredients

  • 1.3 lbs 99% lean ground turkey
  • 1 garlic clove
  • 1 1/2 cups frozen corn kernels
  • 10 oz can Rotel Mild Tomatoes
  • 8 oz small can plain tomato sauce
  • 1/4 cup low sodium chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder

  • baked tortilla chips
  • 1 red bell pepper
  • 1 medium onion
  • 1 teaspoon oil

Instructions

  1. 1

In a large skillet, heat over medium-high heat. Add the ground turkey and season it with salt. Cook while breaking it apart with a spoon until it turns brown and is no longer pink; then transfer it to the slow cooker.

Transfer the sautéed mixture over the turkey in the slow cooker, then incorporate corn, diced tomatoes, tomato sauce, cumin, chili powder, paprika, and additional salt. Stir until everything is thoroughly combined.

  4. 4

Pour the chicken broth into the slow cooker and add the bay leaf.

  5. 5

Cover the slow cooker and set it to cook on HIGH for 4 hours or on LOW for 6 hours.
